This is an OPEN letter to Sturgeon Caviar producers around the world. Join our ethical and truly sustainable Caviar production alliance and include this logo in your marketing material.

Having spent years focussed on saving the sturgeon from extinction in the wild, I was blinkered by thinking that there was only one way to make No Kill Caviar. Following numerous meetings with Caviar producers it became apparent that the two key factors are Fish husbandry and Caviar production.
Fish husbandry in the No Kill sector is basically the same as that of sturgeon breeders, as is the egg collection. There are some differences relating to HACCP H&S procedures and BRC and BAP certification making the Caviar, retail able in the UK.
The main cost implications of the AWI No Kill process is that its labour intensive plus the 30 day maturation period before repacking. Another cost is the Royalty fee payable to AWI and the related documentation etc. These two factors contribute to the higher price tag of their No Kill generally, which is unsustainable in the current climate.

Research shows that there will always be a % who will continue to buy traditional Caviar, some will remain high end whilst the huge growth has seen the Chinese product being rebadged by UK distributors. Not forgetting the "pearls"  faux Caviar market. Basically small balls of fish coloured black to look like Caviar.

However, the most interesting is the new market of ethical and sustainable minded, mainly women who see the health and social benefits. This bracket are screaming out for E&S Caviar at an affordable price so they can include in meals throughout the year. This is achievable!

Of the 2000 plus sturgeon Caviar farms around the world, 95% kill the sturgeon. The remaining 5% could produce No Kill Caviar with small changes to their HACCP and hygiene procedures, making their caviar more desirable to the masses. Consider removing Borax and look into pasteurisation would be the first steps. This would save the lives of hundreds of thousands of sturgeon every year and you could take a greater share of the 30 tons of *Caviar's being imported in to the UK each year.

We can help you through the transition. One key part of the alliance would be that every advert placed would include the E&S, green and blue fish logo which we are happy for all members to use.

*Caviar or faux caviar
