Research shows that there will always be a % who will continue to buy traditional Caviar, some will remain high end whilst the huge growth has seen the Chinese product being rebadged by UK distributors. Not forgetting the "pearls" faux Caviar market. Basically small balls of fish coloured black to look like Caviar.
However, the most interesting is the new market of ethical and sustainable minded, mainly women who see the health and social benefits. This bracket are screaming out for E&S Caviar at an affordable price so they can include in meals throughout the year. This is achievable!
Of the 2000 plus sturgeon Caviar farms around the world, 95% kill the sturgeon. The remaining 5% could produce No Kill Caviar with small changes to their HACCP and hygiene procedures, making their caviar more desirable to the masses. Consider removing Borax and look into pasteurisation would be the first steps. This would save the lives of hundreds of thousands of sturgeon every year and you could take a greater share of the 30 tons of *Caviar's being imported in to the UK each year.

We are thrilled to announce that last year KC produced the first Ethical and truly sustainable Osietra Caviar in the world. Gueldenstaedtii Sturgeon produce one of the rarer Caviar’s on the market, Osietra, with our Ethical approach, this truly high-end Caviar was produced with a cleaner, fresher finish and sold out within weeks of release.
However THIS year 2025, KC will have Beluga Caviar which is being produced using our Ethical and Truly Sustainable process at amazingly low prices.
